Mary Janssen, Baker Extraordinaire
She’s only been here a few months, but Mary Janssen is rapidly becoming everyone’s favourite person, especially on recipe testing days! Hailing from the States, Mary brings more than 30 years experience to her role as chef de partie at Lochmara, including formal training at the California Culinary Academy in San Francisco, and as Executive Chef for Sodexho at Bethel University. She has shared with us this heavenly Christmas recipe:
Christmas Morning Cake
1/2 cup butter
1 cup sugar
1/2 cup dried cherries or cranberries
1 T. finely grated orange zest 3 eggs
1 cup flour
1 tsp. baking soda
1/4 tsp salt
1 tsp. baking powder
1 cup sour cream
1/2 cup currants
1 9x13 inch rectangular cake pan (or two 8 inch rounds)
Method: Cream butter and sugar till light and fluffy with an electric mixer. Add eggs one at a time and beat well. Add sour cream and beat well. Sift dry ingredients and fold into the egg mixture, stirring just until blended. Add dried fruit and zest. Spread in a greased pan.
In a separate bowl, combine:
3/4 cup brown sugar
1 T. flour
1 T. cinnamon
1 tsp. cardamom
2 T. butter
1 cup chopped pecans
Sprinkle mixture evenly over the cake batter.
Bake at 170 degrees C for approximately 25 to 30 minutes, or until a knife tests clean. Try not to eat so much that you can’t manage the turkey later!
